I prefer dark roast for espresso and light/medium for pour over or aeropress. Espresso come out with plenty of crema.

I have found dark roast makes bitter espresso even with the most coarse grind. Had pretty poor luck with dark roast personally.

What is your brew method? I can suggest to lower water temperature and shorter brew time if possible with your coffee brewing system.

My wife and I easily go through over 5 lbs of beans a month and we think some of the Copper Moon stuff is pretty good (though the French Vanilla is oily AF and has no vanilla flavor whatsoever). Guatamalan blend and Hazelnut & Cream are very nice.

Not a fan of this brand and particularly this dark roast. Flavor is meh and I find the beans to be oily which is not great for my semi-automatic machine.
