So what does the extra $300 to move up to the U8K get you in the real world, worth it?

WE had an X900H but a remote got put through the screen and we need a replacement. I have had Sony for a while and was going to get the comparable X90L but reading the RTINGS on the HiSense U8k I started thinking of going that direction. Now this is $300 less and I'm wondering how big of a difference it is.

We generally want it to look great for movies and sports (lot of football and basketball). The kids do a litlte bit of XBOX but it's not the main gaming tv and that's not as critical. We really want it to pop when we put in our 4K LOTR discs or watch Dune or other SciFi. However, the kids leave the tv on all the time so OLED is definitely out for us, we'll definitely get burn in.

You can read more on RTINGS, but the takeaway I got was "brighter" in all situations. If you watch during the day and can't control the lighting, the U8K is a better fit. If you are able to control your lighting, it sounds like most people would be fine with the U7K. Some choose to get the larger U7K instead of the next size down of U8K for a comparable price.
