Precisely this! I flew Zipair solo about a month ago and have only good things to say about it. Even in-flight purchases are reasonably priced!

I think maximum enrollment has been reached.

I'm in the process of purchasing my tickets but was waiting for the deal to pop up in my offers. I've added all of the offers that are expiring soon to my card or actually apply to me, logged in and out, and now there's less than 100 offers available to me and none are for ZIPAIR which makes me believe that it's no longer available because it has reached maximum enrollment.

How long did it take for everyone's transaction to post? I'm thinking of purchasing a flight today and it ends tomorrow so I'm worried it won't count.

I was able to just enroll in it. Use the browser extension cardpointers and you'd be able to add all your amex offers with one click.
