What other paid service have you seen where there is literally no direct customer support avenue short of, "post it in the forums and hope Plex employees see it to fix it." I'm not kidding. That's how they MAYBE fix issues with the platform. I get that supporting so many streaming platforms takes a lot of effort, but then STOP PUSHING BROKEN NEW FEATURES AND FIX THE EXISTING ONES!
I have issues with local live TV streaming/recording, using Plex Pass with friends, Bluetooth audio sync issues when using the latest Apple TV 4Ks, Plex Downloads for offline watching has virtually never worked, and that's just the tip of the iceberg.
Sorry about the long rant but I just feel that people considering should be aware at this point, and diving in with a few of the other competitors when starting up might be the right move. Thanks for coming to my ranty TED talk.

i found plex extremely easy to set up:
-installed plex server on my mac mini m1
-created account and went through setup (they ask the privacy option during setup so you can easily disable it)
-installed plex app on apple tv
-started watching
i also tried out jellyfin but unfortunately it didnt work as well:
-installed jellyfin server on my mac mini m1
-went through setup, very similar to plex
-discovered that appletv doesnt have a jellyfin app, so i had to do research and ended up trying out infuse video player
-started watching, but discovered that the siri actions dont work. eg, "fast forward 30 minutes" doesnt do anything
im sticking with plex
edit: i went through all the settings and disabled all the streaming crap, so my dashboard is clear and only shows my local files. so it is possible to clear the bloat
Fast forward to today... Kodi is the new XBMC, they changed the name long ago since it no longer requires an xbox. If I understand correctly, it's still a much more 'hands-on' solution than Plex, which for the most part is plug and play.
While I agree Plex has become somewhat bloated, I rarely see any of this bloat except some times after server updates (I get their emails so I know there are all sorts of features that I've never seen). And when I do see something, it's easy enough to get rid of it. So there are clearly some settings somewhere that can keep you from automatically getting all of the new features pushed onto you. Same for the privacy concerns, you can opt-out of these things very easily. I would rather it were opt-in but it's not a show-stopper for me.
I have a huge lossless music collection. PlexPass is worth every penny for PlexAmp alone. Skipping TV show intros and credits is also really nice.
I would buy it again if I had to. I've had essentially zero issues over 10 years or so. Lots of negative comments about plex here, thought I'd share my positive experience. As someone who uses it exclusively to stream their own content at home, away, and with friends and family, it has been excellent and painless for me for a long time.
In reality, it's sometimes hard to find a subtitle that matches up exactly with the version of a video you're watching. There are so many different versions of everything, timing of subtitles can be a huge issue.
Fortunately, Plex has a simple lookup via opensubtitles.org and you can try several subtitles within minutes while you're watching whatever it is you're watching. The more popular the video, the better chance you find a subtitle file that aligns with your video.

How well does it work when you have a slow network connection and need to drop bandwidth to get the signal?
That's probably Plex's biggest draw, the almost-zero-config remote viewing on any device. Like others, I have relatives who use my Plex like another streaming service, and I have friends who also use Plex and we stream from each other's remote libraries as easily as from local media.

Tablo also got rid of the commercial skip in the latest hardware and new software (app) version and added a lot of the same commercial ad based stuff that Plex (and let's be honest) other streaming platforms have adopted. Plex's ability to completely remove the commercials, or have the option to also skip, edges out Tablo in this department for me. Everyone has their own use case but when you're faced with paying outrageous cable bills vs setting up a Plex, Tablo, Emby, Jellyfin, etc for a fraction of the price it's a no brainer for the tech inclined. Plex is fantastic for 1080p streaming remote and local but if you're streaming higher resolution video like 4K or raw recordings from an antenna then you may well find yourself in need of an upgraded WiFi router or an Ethernet cable to ensure a smooth experience.
