Apples and oranges. Kitchen shears are designed for more heavy-duty tasks, like opening packaging or cutting through bone, and they're usually duller than traditional scissors. They usually have bonus features for added utility, as well, like a bone notch, bottle opener, or screwdriver tip. Regular scissors have sharper blades and are usually designed to cut through paper or threads—more delicate tasks.

Price drop on KitchenAid shears. Not the cheapest set of kitchen shears in general but probably the lowest price you'd see these days from KitchenAid.

Kitchenaid shears have always been a disappointment.

I have these and I don't use them as kitchen shears (have a take-apart pair for that), but a cheap set of utility shears.
They work well for that purpose - keep in the garage. Project Farm did a review on scissors and these performed very well in that capacity, especially for the price. The few that performed better were more expensive.

these will work for most poultry/fish bones with a minor struggle and bone shards may be an issue. there is a version of shears by kitchenaid and others which are much more beefier and require much less effort and work much better on bone. something like following shape. https://www.amazon.com/J-Henckels...D_BwE&th=1
