128GB SSD is simple unusable. And please don't tell me "but the cloud". I have an SP7 with a 256GB SSD. Never again. You waste several working days in a year trying to manage an SSD that's too small.
Could you swap that SSD out? Yes. BUT you cannot swap teh 8GB RAM out, which is also inadequate. Also, go on Reddit and see the problems people run into when swapping the SSD out in SPs.

The only problems swapping out an SSD in a Surface is if you use a Gen 4 SSD. Gen 3 SSDs work just fine.
Are they reliable? The last thing I want is to be on an important business trip and the swapped out SSD dying on me.
It's a mute point anyway as 8GB of RAM is simple inadequate.
I think you mean moot point....and for most people who are using a tablet, 8GB of RAM is completely adequate. If you need more than that, you are choosing the wrong type of device.
I had this surface and found it very underwhelming. If you want a tablet, just go for an ipad or a windows 2-in-1 Laptop with either the 12th gen Intel processors or AMD ryzen.
The main faults of the surface were that it was slow (in comparison to my M1 air and AMD laptop) and battery life was at 6 hours at best. Maybe the next Surface will be better as the new Intel CPUs seem promising.

You're right. For a tablet, 8GB is enough. Except that I don't know a single person who uses the Surface Pro as a tablet. This is a laptop. I have dozens of colleagues who have SPs. I own SPs. My wife owns SPs. 80% of computers in business class lounges and on planes are SPs. I have never seen a single person use hem as a tablet. Everybody uses them as a light weight, compact, underpowered productivity laptops.
