Same reason iPhones is 4gb of 6gb of RAM while flagship android uses 12 and 16gb.
That being said. 256gb SSD and 8gb or ram WILL limit you with large photo or video tasks. So even though it's a pro. Know it has limits.
You are gaining, fans for cooling vs fan less on the Air, slightly better performance on long running multithreaded tasks.
Be aware the 256 model has only one SSD chip not 2 like the 512gb and above so your SSD speed will be in the 2500Mbs vs 5000ish Mbs. for everyday tasks even light photo and video editing work it will work fine.

I would buy a M2 over and M1 unless the price was 150 or more cheaper for the like for like M1. As some have mentioned Intel/window laptops 13/14 gen have caught up to the MacBook airs M series performance but usually at a loss of battery life and it's Windows lol.
if there is no rush I would waitnl till early match when the M3 air is released and snag a reduced M2 air. 512ssd and 16gb ram and it will last longer than the battery life in years performance wise.

8 gb is a bottleneck. Maybe it's one people are willing to accept. But Any claims otherwise are just apple "magic marketing." Unless Apple figures out how to store files in half the size, 8 gb is 8 gb.
8gb on a Mac is sufficient for general daily tasks even light video editing. I know because I use one daily. With no issue. As would 80 percent of people be ok with 8gb of RAM to do email watch videos and do normal tasks.
On a PC 16 is these days almost a must. With the windows 11 overhead.
So YES on a Mac 16gb is better and Apple should make 512ssd and 12GB ram the base.
But they haven't so we can only advise on what they package.
If price matters most and 8gb ram is what the budget can afford. It will service many just fine.
The air is a different market than the pro level. But I agree a pro laptop should not have 8gb of RAM regardless of operating system. But alas we are were we are and ram prices are going back up so... Fun times.
A laptop needs the RAM much more than the phone 😉

The M1 Air is a great product (I have one) but showing its age. The M2 Air, bang for bucks is the best deal when it's priced $800-900 (very soon)
