For those in the market these are good seats. No frills and not one of the luxury brand names but we've have had a pair for three years and they're still going. Bought another set for baby two.

Because car seats have an "expiration date" of 6 years. So if you're planning to use it for 6 years and they send you a 2 year old one, it technically expires in 4 years. But yea, idk. If it's literally been in a box the entire time, it's the same as one that was produced a month ago. And I would still use it for 6 years.
It depends on the brand. Some brands go by date of manufacture, some go by the date of purchase.

tldr: You shouldn't value a carseat the same regardless of its manufacture date, even if you don't personally believe there's any difference for it sitting in a box. For one it immediately affects its resale value. Say you buy and change your mind and want to resell NIB, you won't get a good price if it's old.
did a quick check on the manufacturing date and it was 2 years old
