I just purchased this and installed it. Very nice. THROW THE SUPPLIED SCREWS AWAY, and go and buy some better replacements at Lowe's. The hardware supplied is very crappy and multiple screws stripped out and wouldn't go in, even with pilots holes as per the instructions. It's a great tabletop, just save yourself a headache and purchase decent wood screws(as mentioned on other Amazon reviews. They were correct). Enjoy!
I got this last time. It's pretty nice. Big nice block of wood (kinda like butcher block) with a decent clear finish. Feels very sturdy (in studs).
Another good option if you have one around; I got my solid wood door from a Habitat for Humanity ReStore. $30

Is this something I can safely and reliably mount and use as a bunk bed (replace board with wider board)?
What could go wrong?

Would this be good in a garage with just exposed studs? 16 on center for the brackets, but not sure about the soft close.
yes i have it in garage. soft close is optional. you just have to gently close it with your hands.

Absolutely 100%. I'm not using the soft close, honestly I don't find it necessary but certainly use cases will differ.

Do you have brackets you could recommend?
I actually do not as I had mine custom made at a mill.

Would all depend on the depth and weight of your desk. I probably could have got away with using some 24" steel brackets (simple to find via a search engine). Federal Brace is a site that sells decent brackets as I have purchased some other things from them in the past but I haven't used their brackets in this application.

Do you all think this could be a dining room table for two?
You'd be eating right up against the wall like some small eatery in NYC. It's only 20" deep. Some people might be missing that fact.

If that's fine, sure.

I have two of these. I just checked to see if I could fit my miter saw on it. If I take the dust collection bag off the back, I can store the miter on this shelf.

With a standard wall in a room do these align nicely if I want to do 3 in a row for a near continuous shelf? I want something for legos. I probably won't ever fold it down, but this seems like a good deal. It might not be the best for my use case though if I could get a very long shelf instead.

Used 3 of these last time to make an open concept tiered pantry, works amazingly but I agree the screws, minus the lug screws, are a PITA.

You can use them, but just be aware that if you plan to use the soft close hydraulic (we didn't bother) those screws will be HIGHLY likely to strip.

Can anyone comment on how easy/possible it is to remove the hardware? I want to use the wood piece only as a desk top since butcher blocks are usually a bit pricier than this.

You're good to go, the hardware does not come installed.

Anyone use it as a ironing stand. Thinking about adding it to laundry..
Same question here. Does the polyurethane coating make it heat/dampness resistant enough to iron clothes over?

Installed a pair of these yesterday. Did them side by side to link into one long wall table if you flip both up. They seem like higher quality than I would expect for the price. They are not pre-drilled like some other wall mounted tables I have installed which allowed for me to align them exactly as I wanted. The one negative thing I can say about them is while both wood tops were quality tops, they were distinctly different patterns and ever so slightly different thicknesses which made it tough to get them level. All in all though, for the price it's one of those products that makes you wonder "how in the world do they make this and ship it to me for this price???" They are very heavy.
