The skin and bone are meant to be eaten but I use these to make salmon patties or sometimes the salmon version of tuna sandwiches.
Dude the bones are soft and malleable. Of course people eat it out of the can. Sometimes people eat it out of the bowl too.

i've had 5-10yo cans without issue
the texture changes, so it's less flakey and more mushy.

i use this various cold salads like i might a can of tuna
or to protein boost an omelet, white or red pasta sauce.
