They don't have everyone, because it's a 7 v 7 style, and probably because of those rights, but does have a solid selection.
They have a Team Burrow, Team Hurts, etc.
We enjoy the game for what it is, as my son wasn't really exposed to NFL blitz like I was.
This is one of the quotes, about player selection.
According to a release from Saber Interactive, the video game developer has partnered with the NFL Players Association and OneTeam Partners to produce the arcade-style game that will feature an "authentic roster of hundreds" of current and former NFL stars.
Kaepernick, Mahomes, Jalen Hurts, Justin Jefferson, T.J. Watt, Joey Bosa, Ja'Marr Chase and Aaron Donald are the players specifically cited as appearing in the game.

There were also a few issues with gameplay speed (games took way too long - 30-40 minutes) because there were animations after every play, running the ball is basically impossible, and interceptions / catching was really unresponsive. The game had a lot of potential but it feels like it needed another year of development / fine tuning. Lack of co-op modes other than straight H2H games didn't help either. (no co-op H2H (like madden squads), franchise or seasons modes).
