That's because they're nitrogenated, hence the nitro in the name. It's similar to carbonation but (obviously) uses nitrogen instead of carbon and typically results in smaller bubbles and a creamier/smoother mouth feel. The 16oz can with 13oz of liquid is due to them adding liquid nitrogen to the can and immediately sealing it. The nitrogen evaporates into a gas which then infuses the beverage and becomes a nitrogenated drink. With all that said, these do taste like straight ass, I've had a few of them in a pinch when I didn't want a sugary energy drink and have struggled to get through them each time.
They are super sweet initially then leave a nasty aftertaste

I find these to have a weird after taste, almost metallic. I've had plenty of different coffees and cold brews, nitro cold brews... this tastes nothing like coffee or cold brew. I don't find this bitter. On the contrary, they taste watered down, and the lack of flavor plus the weird after taste is a deal breaker for me.
