That said, spices are very low in weight, volume and calories so whichever metric, it doesn't make sense.

Actual amount of sugar is 'only' ~21%. So just about the same % of sugar as ice cream and apple pie, not 3X the amount. Still nuts, though.
If you figure $5/lb for eye of round on sale (and you can probably get it lower), that's about $1/oz plus spices and sauces after it's fully dried, in line with the cheapest jerky deals.
Portion control on beef jerky? Based on self-control? Impossible.
