Behind the wall usually. Easier if you're dealing with plasterboard wall. If you're not handy I would hire a pro to do this.
If you don't want to pay for this you can do a jank install with the wires alongside the ceiling and use like a ghost strip to hide the wires and paint them the color of your walls. Not a bad way to go and hides it decently well. You would need flat speaker wire though.
Source: I did the jank method to hide my surround speaker wires. Atmos would be a little more visible.

It will require snaking wires down to the speakers.
I am doing a brand new room so I don't have to worry about that. Doing double drywall on the ceiling. I will be building some boxes for them, angled towards listeners, in the ceiling.

These speakers specifically don't have many reviews, but for $49 each, worth the shot.
Anything similar is nearly or over $200 each.
There are some speakers that have great reps, like RSL, which are $149 each.
