Konami shifted to mobile game development mostly. They make casino games and mindless, in-app purchase heavy games. Probably keeping the IP because it is valuable. Check out Bloodstained if you haven't already, it was made by the creator of Castlevania whi left Konami.
Symphony of the Night alone for $4 is a STEAL - it still holds up incredibly well too, so if you never got around to trying it now's a perfect time.
I miss a real, 2d castlevania. I love all of them, from the OG platforming to the handheld and PSX RPG style. I don't know why they aren't jumping on the metroidvania hype. So many great games are stealing their spotlight. They could make so much money with a new one if they would resurrect some of these stories and plots.

If you mean the themes, yes, you can turn it off. I think there were a few different options for that, incision black borders. Same with aspect ratio, scanlines, and smoothing... if I remember correctly.

The Romancing Saga / FF Legends borders killed me when I got it on Steam.

I played the original NES and a little of two of the GBA ones. I've heard good things about SOTN so tempted to check that out. But also saw the SNES one was highly rated so that's tempting. Don't really like getting too deep in menus equipping things. Platforming is good. Exploration is good.

Rondo of Blood is generally regarded as the best of the classic Castlevania games, and Symphony of the Night is generally regarded as the best of the exploration/RPG ("Metroidvania") Castlevania games. You get both with Castlevania Requiem.
That said, Requiem is a bare-bones conversion of the PSP Dracula X Chronicles with the main game (the polygonal remake of Rondo) removed and Konami didn't put in the effort to put in any options (beyond borders and scanlines) or even a decent main menu screen, but added rumble and DS4/DualSense speaker audio for some reason. I don't understand how other people in this thread don't notice the botched audio mixing that relies on controller audio (and also the persistent added rumble) in Requiem, but you don't have to take my word for it: it's well documented on Reddit and other gaming forums (e.g., https://www.reddit.com/r/PS4/comm...for_those/ ).
But it's certainly possible that others just aren't bothered by these changes/issues, which is fine. You can disable vibration system-wide on the PS4/PS5, certainly, but then you lose it in all other games as well (until you turn it back on in the system settings). Likewise, you can disable the controller audio system-wide (which I do for most games), but Requiem doesn't rebalance the audio, so sound effects are then largely muted. Both SotN and Rondo are great games that I love, but this collection's audio mixing really pushes me to play versions on other consoles.

I would recommend the Anniversary collection for you if you didn't get much enjoyment out of the gba games. SOTN is amazing, but it is the original RPG style castlevania.
Also, Super Castlevania is very good. It's one of my favorites. I still have the cart.
Though I will add that for exploration, you can't really beat SOTN either. That game will have you traveling everywhere more than once.
