Can you charge an EV with this? If so, how much range could I expect?

Not reasonably, but it depends on your needs. First major constraint here is your 3.6 kWh battery capacity. Most EVs these days have around 60 kWh batteries. Tesla 3 has a 57 kWh battery, Chevy Bolt has 65. Some larger SUV models have much larger than that. So this thing just doesn't have the capacity for EVs.

Then there's charge rate. 120v outlets charge at 1.2 kW per hour, which is slow but not nothing, but the specs say it can generate 3 kWh per day using solar. So theoretically it would work, but so slowly that it would take 16 days to charge a 60 kWh ev battery from 10% to 90% using solar alone.

So if you're okay with taking 2+ weeks to charge your EV by generating electricity from solar and then plugging your EV in and charging it with that after the sun goes down each day then it works, but again, it's going to be SLOW.

EDIT: Reading through the specs a bit more, I realized I put 2 kWh capacity in my original comment, so correct that to 3.6 kWh. It also says that it can charge completely using solar in as little as 3.5 hours. What I don't see is if you can hook the solar panels up and charge the EcoFlow Delta with the solar panels and then just have that go straight to the EV, in which case you could potentially do more in a day, I just can't see if it is capable of that, but I would be surprised if it is.

Also, an interesting tidbit and answering the other aspect of your question: My Bolt EUV gets about 3 - 4.5 miles per kWh, depending on driving conditions. Flat areas and conservative driving will get you more, hills and fast driving will get you less. But if you are able to charge 3.6 kWh per day that is roughly 10 - 16 miles of range in a single charge. So if you just need to go into town every day or two, maybe that works for you.

Could someone in the know comment on the efficacy of using such a bundle to power a pair of high-end gaming PCs?

Not sure what you mean by efficacy, but with 3600 watts of power, and most high-end gaming PCs being capable of pulling upwards of 1000 watts/hour, and if you're running two at once, that's roughly 1.8 hours of gaming time for two high end PCs under full load (this is probably worst case scenario, you could probably get a little more).

So roughly a couple of hours a day of gaming with the power from solar charging. If you want to be REALLY accurate, get a watt monitoring unit that you plug into your wall and measure how much power your PC is drawing while under high load, and how much power your monitor draws while gaming as well to see what your specific setup will be consuming.

This is not really viable, this would only work to charge an EV if you only have to go like 10ish-20ish miles a day somewhere. For you to make this even close to usable you would have to charge the car throughout the day and primarily travel during the night, then you would be able to get a good amount of charge into it as the battery of the unit itself would store very little for long term use/drives.

The higher priced Delta Pro deal comes with 400 watt foldable solar panel ("portable"). The 400 watt foldable panel is a bit heavy, FYI. You can also buy without the solar panel for less cost.

"DELTA Pro delivers up to 3,600Wh of capacity." or 3.6 kilowatt hours
FYI, Delta Pro is heavy, but has 2 wheels

Why is there always someone asking this ridiculous question on every single one of these power station threads?

It's probably the same person asking this.

Joke has been overdone. This is worse than HDMI jokes.

I bought the two pack Delta Pro combo from Costco last month that was on sale for $4,000. Does that mean I can get the 30% off tax rebate for the entire $4,000?

Pretty sure it was a joke of a question. Can we just not bother answering it in the future?

And if someone truly wants to know if this can really charge an EV, they shouldn't be buying this or an EV.
