Just get the cheapest Sonos speakers for surround. No need to spend $300+. Get the Symfonisk from IKEA or some used Play: 1's that are S2 compatible.
Also, if you want to add your Home Theater system to the Sonos Ecosystem, you can add the Sonos Port ($350) to that system.

What I have in my house:
I have the Arc, Sub, Play: 1's in my loft for my "Atmos" setup.
I have some old Play: 1's in stereo pairs in 3 rooms/garage.
Also an old S2 compatible Sonos Connect (Sonos replaced with the Port in their lineup) connecting my living room Home Theater Atmos setup
Everything controlled by the S2 app for multi room audio. Works great once your account is setup and you add your music sources. I can't AirPlay to the connect or Play: 1's, but the S2 app works just fine. Not sure why people complain about no AirPlay… basically same amount of button pushing to use AirPlay vs just using the app.
Edit:
I have no need for Alexa to control my Sonos System. It's clunky at best and not worth getting Sonos One's over Play: 1's IMHO. My Arc supports Alexa, but again… have rarely used it.

The era 300s are out now to increase the atmos experience though. They are pricy though.

Also, do you know if these will switch off the surround sound when the wifi speakers are enabled? My ideal use case is to keep all wifi speakers on, but at minimum volume. But I don't want my surround sound to switch to mono if it's outputting to an additional speaker elsewhere.
Edit: my use case is audio from a TV, not from a phone app
