Yeah. That's a super no-no. If it peels, whatever chemical byproducts it made is definitely mixing with the food.

For sure. Unfortunately, Wood sucks anyways no? I've always wanted to use it, because it's natural and won't scratch cookware coatings as much.,, but its porous so it absorbs color, smell, and most importantly bacteria right?

You're supposed to moisturize it every so often with oil to protect it

I'm not an expert or study up on said topic, but as far as I understand wood will absorb oils, liquids and bacteria. However, its natural properties kills the bacteria and doesn't allow it to resurface. Thus why we have butcher block counter tops, cutting boards, etc. You should still maintain said wood using food grade mineral oil.

Food grade mineral oil can kill bacteria since it can suffocate germs and bacteria. Wash, dry, and oil.
