Java is the original coding, with decades of FREE worlds to download (with proper version). Bedrock was after Microsoft purchased it from Mark Persson (original developer) by serendipitous events for $2 billion dollars. It's new, requires purchases of dlc, but offers some free content if u claim it. Bedrock seeks to unify systems. Java serves to allow free content from its beginning. Bedrock is cleaner in its coding, Java has value in the rich decades of content. It's great to have both. Java will allow one to do more "hacking" or fooling around with software. Both are for PC. There exist multiple platforms like Xbox, PlayStation, iOS, android, Switch. You can link them all but usually requires separate, platform-specific purchases. PC offers the best value.

This is definitely an awesome deal. At the time, I was waiting forever for a sale, and I purchased each at 50% which was $19.99? And a sale never came except once in a blue moon (like once in 10 years!). At $14.99 for both, and $1.99 iOS (currently on sale too), link them and u will have multiplatform. Buy content once and have access to all the platform accounts that is linked.
Everyone is giving you a great description, but I wanted to use the word cross-platform. Bedrock edition allows you cross-platform play with other devices (PC, iOS, android, tablet, xbox, etc). I have a Bedrock server, so I'm able to play on my PC and my kid on their tablet, and we can play together in the same world.

That is not possible with the Java edition. You can do PC-to-PC play with Java, but no iOS, Android, or xbox.

My son uses game pass to play this game. Am I correct in thinking if I purchase the game outright I won't have to pay for game pass? He only plays this game so I don't have to worry about all the other games offered in game pass

Yes. I actually just finally purchased the game myself since my gamepass is expiring soon and this is all I play, too.

To simplify it a bit, if you don't know, just go with Bedrock, that is the one you would need to play with family on a tablet, or switch or Xbox.

If you want to play with friends using java, they will let you know.
