Here are the technical spec sheets from InSinkErator for these two units:

Performance Plus C5000: https://mobilecontent.costco.com/..._Sheet.pdf
Evolution 0.75HP: https://insinkerator.emerson.com/...015836.pdf

Going down the list of features/details, the only differences that I see are:

Plastic housing/SoundSeal technology difference - Costco model lacks it (they call it the Full Trim Shell). The marketing language indicates 80% quieter than standard series for the normal Evolution vs 70% for the Power series.
EZ Connect Cord INCLUDED with the Costco model. NOT INCLUDED with the normal Evolution model.
Costco's version has 1 year less warranty (8 years vs 9 years)

Motor looks to be the same and language for the grinder chamber specs are the same. Seems they are differentiating the highest model (1HP) with the additional grinder chamber specs and plastic housing for sound reduction.

So this Costco model looks to be the Evolution 3/4 HP in the Power series plastic housing. With the EZ Connect cord as an added bonus!.

The Evolution 0.75HP (without the EZ Connect power cord), is currently going for $229: https://www.amazon.com/InSinkErat...H8PVY?th=1
I got the American Standard last year and am quite happy with it.
any reason to get this over the American Standard Slim Line on sale for 79.99?

Thank you OP, I told my mother in law I'd be on the lookout for a step up from her contractor model that's been acting up. If this is an evolution in Costco dress it's a great deal. It really looks like the power series, but the grind chamber specs like the evolution. I'm tempted to put one on the shelf.

The specs seem to align decently well - minus the quiet plastic housing. Looks like they are giving the quieter housing to the would be Evolution 1hp.

At this price, I'm in for one personally

I have the Evolution 1hp and actually love it. It is so quiet, just like the Bosh dishwasher. It does not even bother people watching TV ... but I think that is if anybody says anything about the noise watching TV, my wife would press them into dish service.

for performance? not really. For quietness? depends on if that matters. I put the evolution 1hp in my house and the american standard in my rentals. Both work well.

I've only used Insinkerators but I went through 2 in the last 12 years. Replaced it with an American Standard last year and I like them. Accidentally dropped a shot glass and it completely obliterated it. I'm sure the insinkerator would have jammed.

Just what I'm looking for, this can grind bones. If you cook everyday this is worth it due to the years of warranty. A bit overkill for most households.

If anyone has tips for installing this in a bathtub so you can meal prep while showering, let me know - asking for a friend 😀

I got the non-slim, 5/8hp model for $72:

https://www.lowes.com/pd/American...5013366607

Installed it a couple weeks ago, no issues with it at all so far. All stainless inside, lifetime corrosion (whatever "lifetime" really means lol) warranty.

It works, it's not too loud, just makes a "clink" (normal, per the manual) when you turn it on.

dang, peeps, this is overkill for a garbage disposal.

if you happen to be on septic, definitely don't do it.

even for the rest on sewer system, why you putting stuff down your sink/pipes that requires Jeffrey Dahmer type crushing power?
Why are you answering your own questions?
