Here are the technical spec sheets from InSinkErator for these two units:

Going down the list of features/details, the only differences that I see are:

Plastic housing/SoundSeal technology difference - Costco model lacks it (they call it the Full Trim Shell). The marketing language indicates 80% quieter than standard series for the normal Evolution vs 70% for the Power series.
EZ Connect Cord INCLUDED with the Costco model. NOT INCLUDED with the normal Evolution model.
Costco's version has 1 year less warranty (8 years vs 9 years)

Motor looks to be the same and language for the grinder chamber specs are the same. Seems they are differentiating the highest model (1HP) with the additional grinder chamber specs and plastic housing for sound reduction.

So this Costco model looks to be the Evolution 3/4 HP in the Power series plastic housing. With the EZ Connect cord as an added bonus!.

I bought this for $220 on Amazon (it was on sale at the time), minus a $25 courtesy credit Amazon gave me (I forget why), so $195 net, plus tax.

Go figure it would be cheaper at Costco just a few months later!

It was very easy to install and works super well. Unbelievably quiet. If you're doing self-install, obviously just make sure the dimensions fit and you have electrical present. I think the only thing additional I had to use was plumber's putty

I have no idea if it's just "an old wives tale" or not but I've heard (many times) you're supposed to put bones down your disposal every few months to sharpen the blades (or keep them sharp?)

(I've heard to use ice cubes even more though.)

So while I don't think huge beef bones are the way to go, the occasional chicken bone isn't going to even phase a decent disposer. Even my lousy Badgers do fine with those.

Most of the disposers, and especially all the cheap ones have thin little cutting heads. These just don't have enough inertia when they hit the waste. You end up with larger waste in the drain causing more frequent clogs. Something like this or the evolution series on which it is based has heavy cast cutting heads that absolutely pulverize the waste. The amount of time I've spent on mysl back under the sink clearing out other disposers makes the price of the evolution easily worth it. The price of the this Costco model is a no brainer.

Great price for a solid unit, particularly as it comes with the cord and the gasket for the drain assembly, neither of which come with the similar models from the big box stores. I really like the removable sink baffle so it can be thrown in the dishwasher. It is no quieter than my previous Insinkerator Badger.

I am highly suspicious of the effective horsepower and quality of the 1.25HP American Standard. I don't see how they produce a long-lasting motor at nearly twice the rated horsepower and sell it for 1/2 the price.

Got this one for $80+tax. It's slim so saves space under counter and is 1.25HP, 12-yr warranty. what am I missing? why buy this in OP.

I'm not joking. We cook a lot of chicken dishes/bone brothers and sometimes cleaning we get bones down there. I'm buying this unit for this specific reason since my Badger 5 gave up a little over 2 years old (outside of warranty), I also want it to grind watermelon shell as I don't want to dispose them in my garbage can.

It mounts directly to the strainer ring which is included. As a previous poster mentioned, you'll need plumber's putty to set the strainer ring.

The units that state "stainless steel grinding components" are almost always a reference indicating that only the grinding blades are stainless. The remaining parts that are exposed to food and water are steel (they rust) or plastic composite (they are not strong). Consumer reports and most review sites do not favorably review any disposer with these setups.
