Main use is hiking photography so lots of landscapes and selfies

Why? The camera you carry around is much better than the camera you don't. These cameras are extremely small and light. The pricing on the R100 and R50 refurbs are approaching point-and-shoot territory. If you break them, say on a hike or carrying them around town, it isn't going to break your heart.
People who pick on the quality of a $299 camera body (lens included!) are missing the point. Yes, if you spend $2000 on a R6 Mark II, everything about it is going to be better. What you need to ask yourself is are you going to get anything better anywhere near this price point. Even the R100 is going to blow any smartphone out of the water in terms of picture quality.
People looking for a happy medium should check out the $399 refurb R50, which has a touchscreen and an excellent autofocus system. It also does 4K video competently.
My use case is going to be to use the R100 as an always-on camera for knocking around town doing street photography and other still work, and the R50 in cases where I think I might want video or need the better autofocus. I can teach my son on these cameras without worrying too much about breakage.
Whatever EOS you decide to get, have a look at the refurbished RF35mm F1.8 Macro IS STM. It's an amazing lens for the price. Canon also has an extremely sharp RF50mm f 1.8 that will turn into an 85mm-equivalent portrait on these bodies. Both of these lenses are small and light. Attached to these bodies, you will have a very compact and portable package.
