It's incredibly time consuming to trim a brisket? Takes like 5 minutes max and it's going to be realistically at least a day and a half later before you can eat (trim, dry brine overnight, smoke for 12 hours, rest for 12 hours).

You know everything in the brisket is usable right? The extra fat can be rendered into tallow and the remaining chunks of adipose tissue and trimmings can become crispy chicharron.
