If I spend $1,000–2,000 or more on a laptop, I expect it to (1) last me a long time (i.e., have good specs or be upgradable), (2) perform like a workhorse (i.e., have 50+ browser tabs open, Excel, etc. without any hiccups), and (3) be able to store all of my important digital possessions (i.e., family photos and videos, music library, etc.). But that's my opinion. (Heck, I would even want it to play video games, although I understand that MacBooks aren't for that.)
I still have a 2012 MBP that works fine to this day thanks to its upgradability. I would have been forced to upgrade quite a while back, had I been stuck with the original RAM and HDD config. No wonder Apple moved to ridiculously expensive before-checkout upgrades and unupgradable designs.
Yes, it's expensive, but it does provide features you don't see from those other 8GB devices. It also sips energy; it only consumes ~20W while encoding. Its processing power is also much greater than those "few hundred" dollar laptops.

Also to note the AppleCare is only valid for as long as you pay the yearly $200 plan, if you stop paying your warranty stops.
How does Apple define pro? If you do a good amount of editing you need 32gb.
