There may be handful of games that MIGHT benefit from 32GB to help make the game not lag. But if you really want 32GB, just upgrade it yourself and watch you'll never go over 12GB while gaming.
Of your into productivity then yes, opt for 32GB.

edit: I remembered correctly that this was also the episode they extrapolated DDR4 experiences to DDR5 on why it made budgetary sense for the DIY scene to not go overboard with RAM. That's in the section at the end titled "AM4 DDR4 Lessons". Also look at "RAM Usage in 30+ Games" section, a lot of total system RAM with (I believe) a "clean room" setup is closing in on 16GB. He later cites 2 GB of ram used by discord + one chrome tab with 4k video so you'll be at the limit right now for a lot of games. As Windows, Chrome, and general applications gets even more greedy with your ram, you may notice performance drops in games that previously played fine. Probably just watch the video (and do additional research) instead of listening to me if you're going to make a $1000 purchase.

If you do the Core 7 155, 16GB, 1TB, and select the per-key RGB backlit keyboard, it drops to $1,299. Selecting the per-key RGB is what dropped the price for me.
