I have experience servicing these Yamahas and they are excellent bikes with a few minor issues. First and foremost, they run Yamaha motors, which means you're going to need a Yamaha dealer if something goes awry there. I have not yet run into any motor issues in my experience with these, but note that Yamaha dealers are few and far between in some areas.
Another issue is that geometry on these is a little funky. The road and hybrid bikes are built off the same frame that is sized small, medium, and large, but really fits more like medium, medium-large, and real big. Measure out your current ride and verify that it'll fit you before you hit 'order.' I haven't had luck getting people much smaller than 5' 4" on the small size.
The final issue is that they run their own proprietary rear derailleur hanger on many of the frames, which makes a basic repair (rear der hanger replacement) a bit frustrating, as you have to track down the right part from, again, a Yamaha dealer. If you grab one of these bikes, order a couple of spare hangers at the same time, if possible, and make your future repair needs that much easier.
Otherwise, like I said above, bonkers deals.
Regarding the drop bar vs flat bar for the road bikes, looking at the geometry tables, I notice the stack height is pretty low, at least in the largest size. That would make using the drops rather uncomfortable for me. Also, the longer width of the flat bar will provide more stability compared to narrow drop bars, which is something to really consider for a bike that can sustain 28 mph. Just something to think about.

For real mountain biking, as intended for a bike like this, its power is more than sufficient. More often than not, it's the trail conditions and difficulty that limit speed, not the power of the motor.

I have been a cyclist for over 30 years and buying selling high end bikes for a lot of that time. I think the overall ebike and regualr bike pricing needs to adjust down slightly, but this is a huge move for yamaha. 60% off is pretty nuts and aggressive enough that it has to be due to company specific needs and not the market as a whole.
That being said, i nearly bought a Specialized Levo Expert on their sale last year which was around 40% off. I would imagine most bikes sold this year are at an asp 20%, or more, off of list.
I ordered a Moro-07 and Crosscore RC for the GF. They are both crazy good value, not just relative to current pricing but even pre covid pricing. Im stoked to finally have a good jump into the ebike game as a supplement to my acoustic yeti sb130. Thought i might have to sell the acoustic and/or go one or the other. With this deal i can afford to keep both.
The crosscore will be great for the gf to be able to do gravel and road rides with me when we camp and tour. I can ride acoustic and she can set the pace and tag along. Excited to get her involved and she is as well. I love ebikes for that reason, making all ability levels equal and able to ride together.
I have put this deal to several coworkers and friends and i have had at least 3 people i know also pull the trigger. All of them are also avid cyclists, so that shows other people with knowledge in the industry also see the value enough to spend their money.

You need choose, what you like.
Both can serve what you decried.
Crosscore has flat bar and wabash has dropbar. Performance will not be huge different since both has same battery and motor. Dropbar will benefit for wind resistance so you might be faster but flat bar might be more comfortable because body will stand more. Possibly you might have better control. Wabash has better components than crosscore. Honestly both will serve you well unless you are getting into serious biking.
I started mountain bike since I liked flatbar then I started ride road bike more because I liked speed of road bike. Wind resistance was key so I prefer dropbar nowadays. I moved to city and roads conditions prevent to have speedy riding so I was searching for gravel bike for a while. I started to have knee pain if I ride hills so wabash will serve me well so I ordered it. Crosscore will be totally okay if you don't have specific preferences like me.

Maybe you should check directly with the bike shop which you are supposed to pick it up. They might be able to order through their Yamaha account with same offer. If you don't have dealers near you… keep trying or try during late night???
