Steel cut take longer to cook & have a chewier texture. Really personal preference. Although I prefer old fashioned for recipes that need oats, simply because it's softer.

Probably at least a year. But oats do turn rancid.

I thought steelcut oats usually were... well cut up in pieces. (The ones I'm familiar with anyway.) These just look like regular old fashioned oats from the package. Still steelcut if nothing's cut?

Depends on a few things, like what rolled oats you're using and how long you choose to cook them, eh? In all seriousness though, steel-cut out can also be pre-cooked like rolled / quick / instant oatmeals are to some extent. Which can greatly reduce the final cooking time. Since these don't mention quick cooking that I can see, they're probably plain steel-cut and around 20-30 minutes to cook, depending on the cut* and how soft you like them. Since regular old fashioned (rolled) oats might take 5-7min or so, can say maybe 4x as long for steel-cut.

*Seriously though, like the name says steel-cut oat are usually cut into smaller pieces to allow for faster cooking. So why do these look like regular oats!?!
