If you working from home and using VPN remote desktop or uploading your OF content sure get 2 gig. Most working from home isn't this at all.
How wrong are my observations? I know for handful of friends on FiOS 1gig or more where I try to test they simply had a need for better WiFi equipment.
They kept chasing fix by being tricked to "whole home WiFi plus etc" using non mesh FiOS equipment.
Never fixing problems so they upgrade speed again year later.
When I try to check my their speeds using cloud flare and WiFiMan they are under 500 down and 300 up.
They don't have devices wired or with new enough wi-fi to even use latest WiFi except their iPhone and that doesn't need 2gig.
1 or 2 FiOS extender often isn't great and didn't seem to be mesh. Most their stuff never setup to connect to this.
Perhaps first get mesh, even with mesh HVAC and some walls win. So must run wire or use what wires you have to place around chimney ducts etc.
1- Get 3-4 $20 Linksys, setup mesh using stock FW.
2- Turn off updates, steering, priority (apparently make things worse)
3-Use WiFiMan to see if WiFi deadpso
4 - Try to see if can run network cable to place parent or child node in central spot where most important devices use internet. If have FiOS TV coax lines inside house maybe MoCA adapters to use this.
5 - Once all is working better or same as before return FiOS WiFi stuff and lower to 300/300 or 500/500 plans and see if you really notice slower or same.
5- Put the $30 you save per month to Auto deposit into your fidelity SPAXX or high yield account or just towards streaming services.
Not too much $ and everyone I was testing their Wi-Fi was paying hundreds per month for TV phone they didn't use.
Even $80 FiOS is actually great deal, I feel for those stuck with AT&T DSL and bad cable for more and 2006 speeds. I was shocked this still was the case as family was trying to setup TPlink mesh.... yikes forget the mesh you need internet above 80down and 40 up first.
Added new extender info. Looks great on paper and fine in real life but still dead spots.

I had multiple phone lines a zillion years ago in the prodigy and AOL dialup days. They kept mailing me new customer FiOS postcards.
Bill went down $100. If course I tried to keeps old alive and just get new setup completely. The tech said yes...but no Internet for few hours until old service dead and new live. I used online chat and txt to my cell # they didn't have to arrange tech installation.
Tech was good guy, and not end of world but I was home that day to make sure all good.
My deal at the time promised a $100 home Depot gift card after 6 months and I never got and never did resolve. I should try again
