I found that both the wood attachment and gas burner attachment for the Pizzello got the interior quite hot within 15-20 minutes, however, they both had trouble getting the stone hot enough in that time to properly bake the pizza dough bottom. What I ended up doing was pre-cook the dough for about a minute, then take it out to add the toppings and then put it back in.

The heat from gas or wood pellets was enough to quickly cook the top ( to the point you have to watch carefully so you don't burn the top after a minute or two before you rotate).

But, after you take out that pizza, you either have to reheat the stone again fully, of do that two-step process of pre- cooking the dough.

I have read that the Ooni had a similar situation based on reviews from users: that the first pizza after pre-heat cooks well, but then it takes a while for its stone to get back up to temp if you just want to cook a pizza in one step with its toppings.

I recommend replacing the pizza stone with pizza steel. I did that for a stoke 13" after the stone cracked. Steel heats up much faster, greatly shortening the recovery period. The only downside is there's more danger of burning the pizza bottom if you're not careful. If the pizza bottom is cooked through but the top isn't, you can lift the pizza up with the peel to just cook the top.

I've owned the Ooni 16 for about 4 years. It is expensive, for sure, and part of what you're buying is the brand (at least now, with more in the marketplace). However, mine has been rock solid, and I've cooked literally hundreds of pizzas on it - it's a great option for parties. Yeah, the first and second bakes are the best at a time, but if you heat the stone up a while (30 minutes) at the beginning, you can usually get 3-4 good pizzas at a time. The key is to turn down the gas all the way by the third pizza. That way the crust has more time to bake without the top burning. Thin crust obviously improves the situation, as does reducing the amount of sauce. I'd buy it again in a heartbeat.

If you're in this price range. I would seriously consider a Gozney Roccbox. I know this ooni is a 16". But I found 10" pizzas are better to work with, prepare and cook. The 10" is more portable if you don't have a dedicated space for your oven or want to take it to a friends house or tailgate. I have had an ooni for years and when I upgraded to my Roccbox I was able to make pizza after pizza because the stone was a lot thicker. If you're looking to casually make a few pizzas or don't know if you want to make pizza making your thing, Just buy a gas oven 250 or under to save some money. If you have an oven and want to up your game, Then seriously consider the Roccbox. If you NEED to make larger pizzas then this is a great price for a large quality pizza oven.

I've owned this for at least 3 years. I did the whole buy your own ingredients to make ur own dough... and it's truly amazing and you can taste the quality and freshness. However, making dough takes time and planning. Fast forward two summers later, now I'm buying pre-made dough from either Safeway or Trader Joe's. The experience is not the same. But it's still pretty good. The difference is the style of pizza. Ooni is kind of designed for the pizza Margherita/neapolitan where u need extreme heat (600+ degrees). Using the pre-made doughs are more like domino's style pizza. The differences in pizza require different baking techniques. Pre made dough type pizzas should be cooked slower and on lower heat. I've definitely got my money's worth from the ooni. My wife invites her girlfriends over and we have a massive pizza making party with all the kids. Side note... I opened up the nozzle to allow for a natural gas line instead of propane. Additionally, I had a hard time getting some extreme heats, was only getting around 6-700 degrees max. I went on ebay and found a door mod for the ooni. Once installed, it reaches in excess of 900 degrees! Insane.
