This lists the differences. Although like I said, you can put the hardened gears/extruder on the P1S, and someone sells a plug in resistor to trick it into upping the bed temperature past 100C. Then it will run any material as good as the X1C.
Almost everyone (especially if you are just looking into starting this) only prints with PLA or PETG, which the A1/A1 mini run perfectly. The materials that need the enclosure/higher bed temps have higher heat resistance/stronger/etc (depends on what material). But again, all the little figures or toys people make/stuff for around the house is typically PLA or PETG that the cheaper ones will run perfectly.

The 5M's print area is between the two Bambu printers (180^2 vs 220^2 vs 256^2). It's a Core XY printer which is helpful in cases where the Y axis shaking of a typical bed slinger would cause delicate prints to fail. The 5M is fully network capable (wired and wireless via Klipper). I believe it's faster than the Bambu printers though any speed difference is going to be small. The FF 5M does have a nice ability to grow as the company provides parts and files to print/build an enclosure for the machine.
The workflow isn't as smooth as Bambu's if you want to create an account with Bambu. If you don't like sharing your data with yet another company then both companies support the more traditional work flow where you download/create the files, slice them locally and then either thumbdrive or network to the printer. Note that the 5M's network printing was originally limited to the easy to use but limited feature Flashforge slicer. However, after launch then updated the Ocra Slicer profile to include full network support. Thus, as far as slicers are concerned both Bambu and FF are using slicers based on Prusa/Orca slicer. If you want to thumbdrive it, the FF 5M does it via USB vs SD card. A down side to the 5M is it does not have a multi-material unit.
So if you are in the $200-300 price range I think the 5M is a printer that both nicely splits the difference between the A1 Mini and A1 while also providing some outright advantages over the A1.

I personally would not buy any printer anymore that doesn't have an OEM MMU solution that works which basically leaves...Bambu?
Glad you are happy with your FF, but you'd likely be just as happy, or happier with a Bambu.
