Why did they put a salad in the 2nd picture? Does anyone prefer heated garden salad??

The photo with the food shows the 3 trays on some "rectangle pan" which seems to be on top of the "warming tray."

Does that mean that water needs to be added on the rectangle pan like in the buffet places? I figured that if the 2.5 qt trays laid directly on top of the "warming tray" the bottom food would get warm/hot but not the top - compared to the ceramic "crocpot" style servers.
