Archon says 21-speed shifting, so it must have a triple chainring up front (3x7). Which honestly seems weird for an ebike. Due to the speeds these are capable of, you'd ideally want a big chainring. You will probably not use the two smaller ones at all.
Personally, I think the Archon looks pretty bad with all the exposed cables everywhere. The Saber and Herald look like the same bike - just high-step (top tube) and low-step (Herald). HOWEVER, when you select 1000w Saber, you see exposed cables running along the bottom of the top tube. But not when you select 750w or either version of the Herald. Confusing.
Personally, I'd go with the Herald - if you ever have to sell, low-steps are more popular (easier to get leg over) and it's the cleanest looking one IMO.

750 watts is the legal limit practically everywhere. But don't take my word for it, or the manufacturer's. Look up the laws in your own state AND in the municipalities, parks, or lands, in which you intend to ride. I think most of you will find that these aren't legal for your intended purposes.

750w isn't a bad number and gives you compliance with class 3, unless your state, like mine, puts on extra requirements.
