You are correct. The most common mistake is to view wagyu like regular Angus beef. The meat to fat ratio is extremely different. Wayu is closer to 50/50. Japanese do not eat steak like 8oz to 16oz portion sizes, so Wagyu was developed for small portions and thin slices to pair with other foods. The excess fat from Wagyu, especially A5, is saved in the form of tallow to grill with vegetables and toast bread.

You gotta stay on the grill. The best steak I've ever had was ny strip from Costco that looks just like this marbled slab......
