If you cook every day like I do, the Thermapen One is 1000% worth it. This thing is easy on the batteries. It lights up instantly when you pick it up and shuts itself off when you don't. It truly gives you an "instant" read. It is easy and clear to read the display no matter how you hold it. It's highly accurate. It's waterproof. It exhibits the kind of thoughtful design and engineering you want in an everyday hand tool.
In fact, that's the way to think about this. If you reach into the toolbox once a year to hang a picture on the wall, then you'll be fine with a lightweight hammer and level from the dollar store. If you're a master carpenter who works with tools all day, you notice the difference and find the difference in cost almost meaningless.
