I have the previous gen of this Air fryer, which looks almost identical.
Pros:

Having each basket separate allows you to keep using it while a basket is in the dishwasher
It takes far less space in a dishwasher because the baskets are compact and fit into the top rack, and because instead of an inner basket, there is a small inner tray that fits like a plate. This is a really big deal if you use and clean it regularly.
Being able to cook different things separately is very convenient, even just for the purpose of setting different cooking times, or just starting them a few minutes apart as you prepare the food
The controls work well, some air fryers mess this part up.
So far it lasted perfectly, despite washing the baskets in the dishwasher a couple times a week.
Cons:

The smaller basket make it harder to cook large things such as frozen pizza (you'd need to separate the pieces and fit about 2 pieces per basket
When cooking both baskets simultaneously, it cooks at a slightly lower temperature to not go over a certain wattage. So it's a little bit slower (maybe 10% so)
The lack of inner basket is a bit of a bummer. They had to do it to save space with these small outer baskets, but it means that you can't actually poor out the food like in the photo because all the accumulated oils at the bottom will drip all over your food. Instead, you would need to use non-scratching tongs
Overall, it's one of the buys we are most happy with. But be aware of the cons in case it's a deal breaker.

Is this a good deal? I could use a new, bigger air fryer

The reviews for this look really good. I use my air fryer all the time and two baskets could be nice. Gonna order and wait to see what else comes on sale.

It seems like everyone swears by these, but I can't understand how they're that much different than a convection oven/toaster oven. Does it do that much better for making something like chicken tenders and french fries for the kids?

It seems the difference between this and the one regularly on sale at Costco is thus has Air Broil function and Costco has 2 racks. Am I missing anything?

Yep. The heating element in one side of mine just stopped one day.

They will come out crispier.
It's hard to explain but they work well.
Although this is a very big one.
If you have several kids and a lot of counter space in the kitchen it would work,

I bought this a few weeks ago and love it. I bought a similar model for my mother in law.
I agree with a previous post about buying from Costco so when it does break, I can return it.

My old air fryer lasted about 6 years before dying during hurricane Milton.

Compared to the Costco one this is nearly identical. The difference I see Costco comes with the basket whereas the Amazon comes with the temperature probe.

An aftermarket basket can be purchased from amazon anytime, but the temperature probe built in cannot. I chose the Amazon version.
