I have played with the camera settings and even tried all of them in the same lighting and its always the same problem.

I have played with the camera settings and even tried all of them in the same lighting and its always the same problem.
These models go on sale every year (Mini 8, Mini 9, Mini 10, 11, 12, etc..) and now the Mini SE. These are basically the 'lowest of the low end' and ones I would generally stay away from.
These cameras seem to be geared more towards teenagers who like it for the colorful, bubbly camera look more than getting any types of decent photos.
The light meter on these are typically not great, the lens is slow (meaning it required a lot of light) and they're trying to meter light of the overall scene but don't do a great job at it.
The camera itself is only a small investment compared to the cost of the film, so you're better off getting a better Instax camera that will give you more 'keepers' than over/underexposed throw-aways.
If you want a decent Instax camera (meaning you'll get mostly "Keepers" and good results from them), I'd recommend:
Instax Mini 90 or Mini 99 -- These have more controls, but do MUCH better with auto-settings and determining the amount of light needed, so you'll get much better overall results.
Lomo Instant Automat - The "Automat" Part is important here.. these cameras are a bit more Manual, requiring you to set the distance (ie: 1-2 feet, 2-5 feet or 5+ feet) but aside from that will get you vintage/retro looking images more than any of the other instax cameras. This is the one I'd generally recommend, and you can often find used ones on eBay for as little as $10 from people not listing it properly (it normally sells for $100-150 new)
Instax Mini 70 or Mini 40 - These are a bit older, and lower end than the Mini 90 but are pretty comparable in price to the Mini 10/11/12/SE but will give better results.
Instax Mini Evo - "Instax in name only" - these are basically an cheap digital camera with a built in Instax printer (so it uses film, not paper). Lets you pick the photos you want to "print", lets you apply filters and effects, and lets you print from your phone
When you're spending about $1/photo, an extra ~$50 up front will save you on bad photos you end up tossing from a lesser camera
