Why the TD? I paid $140 for the orange one i.e., v7 16mm, about a year ago.

Probably because it's not titled appropriately. I agree these are great deals.

I own and been using the Prism V7 paddle for about a year and they are as good (and/or even surpass) those better known brands that costs well over $200. These are great paddles, they just don't have the marketing budget of these large companies which TBH were quite disappointing paddles when I tried them out. In addition, the Vatic Pros come with a very nice cover, which again those $200+ paddles don't even include.
To be fair, there is NO single paddle built for every player. Each pickleball player is different so will require a different type of paddle.
A bit more info, this company was founded by then 25 y/o, Daryl Wang. You can watch an interview with him here. https://www.youtube.com/watch?v=HVYWAhQO608
This guy is something else!

My friend owns the Pro Prism, I own some generic pair (2 paddles set) from Amazon w specs: raw t700, thermoformed, USAPA approved paddles. Mine are more balanced, the same dimensions as Pro Prism, slightly more textured carbon fiber face. I paid $66 for the pair.

Vatic makes great paddles. I see them a lot at my local court. However, many equally nice paddles have come out in the last year. Many of them are on sale now or will be for Black Friday. There is a nice summary of pickleball sales at these websites:

I would suggest going to a local tennis or pickleball shop, often offer demo programs.
Paddles are make mainly about what you feel comfortable with.
This is a great way to find one you like and usually the rental cost gets deducted if you purchase.
You can start by asking for suggestions in your price range.

AliExpress has since fantastic paddles, but most people will unfortunately not go that route because of shipping times and the unknown nature of brands that aren't popular. Even though few people compete in tournaments, people still get a little hung up on whether or not a paddle is officially APA approved.

I use a Jikego JK015 from AE. Fantastic paddle for control players. It was about $40. Kevlar carbon weave surface with great spin.

You can even get thermoformed paddles with T700 for under $50. Hope more people see the markups for the popular brands and vote with their wallet

any difference between the two models at $80 and $110? I'm a beginner but have started to really get into the sport. Worth spending the extra $30 or won't really see a difference?

I'm very intrigued by juciaos, I've read the Spin (I think that's the name) is a great model, and folks like the Shogun-like ti-weave paddle. Have you tried the Spin, or any of the Vatics? Curious to know how they compare since the value prop seems to be there.

I'd just go with the $80 Prism model. Been playing for over a year and it's still a way better paddle than I am a player;-). I find it funny that many folks I play against have gone through several $200+ paddles thinking they will become a better player and I can easily beat them and their fancy Selkirk paddle. "It's not about the paddle".
