No Ultra 3 until Fall 2025 at least.
Ultra 2 was released in 2023 and re-released in 2024 with a new color/bands.
This SKU (MREG3LW/A) that Costco is selling is from 2023, so clearing old stock.
All Ultra 2's are model A2986 with different SKUs depending on color, bands, year, etc.

Shipping dates seem a bit far out with Amazon - seeing Jan 10-12 for Seattle at least. Costco has it for next week.

I think the benefit of this would be purchasing directly from Costco if you have a Costco Visa card as you also have the higher tier membership by default and would get that version of cash back. Outside of that....buying off Amazon is SUPER FINE and would likely get it to you sooner.

Costco doesn't have favorable return policies regarding Apple products and if you buy AppleCare+ it then truly doesn't matter where you bought it from as you'd be going through them for everything anyways...

Could be, but seems unlikely given the release cycle. I think it's just that this silver color is now a bit older on the market and wasn't refreshed with the last release where the black one was released at the same time as the series 10, a few months ago. And you'll notice the black ultra two has not been on sale.
