Use gift card and apple edu to take it down to about $420 before tax.
My air m1 8+512 became a hot slow trash after upgrading to apple intelligence. Literally struggles to open darn 20 photos together.

I just bought two mac minis when they launched from Apple's .edu store. They're returnable until next year. Can you please explain how I'm supposed to use gift cards to save $79?

You'll have $75 in target gift cards to spend at Target if you buy 5 Apple gift cards. That's where the saving is. It's not directly at Apple.

When you say base version, is a $499 one on EDU store with 16GB RAM good enough for AI? Or your friends did any other upgrades?
