Setting aside the plastic concerns, this is an incredible way to make perfect steaks, chicken breasts, pork tenderloin, salmon, etc. The very precise temperature control allows you cook thick cuts to a perfect temperature throughout. A quick sear at the end and you've got some amazing food. One of the best things is the flexibility because true timing window to having something perfectly cooked expands greatly.

Downsides are the time and space involved and the plastic bags, which are generally regarded as safe due to the low temps. But for some folks, no plastic is safe. There are silicone bag alternatives, but they leave a lot to be desired. Glass isn't ideal, but some people use it.

I can't speak to this particular immersion heater, but this is a good price if you want to experiment with it. I'm

Another cool thing is that you can pasteurize eggs to use in their "raw" form as some recipes call for while reducing the risk of food-borne illness.

It's a precise way of cooking your food in a water bath. You seal the food in air tight bags and submerse the item in the water. The wand is set at a temp that cooks the food evenly. The French started this trend. Love it for steaks, chicken,pork.

Nope. Just use a regular freezer bag and the archimedes principle. Put the food in the bag, zip it shut all except for about one inch. Lower the bag into the water and it will push the air out. When the open section is just above the surface of the water, finishing closing it.

Most of the air es removed and you are good to go.

This keeps your sealed protein in a water bath at a set temperature for hours. Mostly for steak.

Typically sous vide is done in plastic bags, but there are also reusable silicone bags.

There are even recipes that use mason jars.

The vessel doesn't matter: I use a large stock pot. But you literally seal the food in plastic bags so the container might be the last of your worries if you're concerned about plastics.
