1, 2, and their acquired dlc all work pretty well on Switch.
All You Can Eat (a standalone with all the content from the other games blended together) runs HORRIBLE at times. The larger maps lag. Sometimes the game gets stuck in endless loading screens. While it is generally the better "deal", it is not always the better experience IMO.
Last note, if you plan to play with friends remotely, ya'll need the same version of the game unfortunately. Just because all you can eat contains the second sequels content, does not mean you can play with someone playing on Overcooked 2. All You Can Eat is a standalone game with all the content from the other games.

Also, the Gourmet Edition also tends to go on sale almost as frequently, and the sale price the last couple times has been $9.69 (prior to that it bottomed out at $12.12 on sale for like 2.5 years).
If you're interested in getting the DLC it might be worth waiting until the Gourmet Edition inevitably goes on sale (I'd guess towards the end of February/early March).
