I've seen some people prefer 2x 16gb over 1x 32gb. Can someone tell me why that would be better or does that just matter based on device like laptop with single slot vs Desktop with several?

Below is a good explanation.
Dual channel RAM provides significantly better performance compared to single channel RAM by allowing the CPU to access data from two memory modules simultaneously, effectively doubling the memory bandwidth, while single channel RAM only uses one channel, resulting in slower data transfer speeds.

I didn't know this until last week. A single DDR5 DIMM is dual channel by design. Adding a second stick of DDR5 may give you a bit of a performance bump, but not as much as adding a stick of DDR4. Adding a second DDR4 will give you dual channel.

Short term upgradism.

Systems that use memory like this tend to be stock oem, and will run slower speeds at 4 dimms, so its best to buy max capacity 2 dimm. That being said I use 4x of these and am fine with the performance, very stable.

This is pretty slow ram for the price. I've seen 2 x 32GB ram sticks that go for around $155~$160 that are much faster even when not on sale. I can provide the amazon link to them to prove this is just an average deal at best.

Yup. For a few dollars more 6000Mhz can be had ($80-$100).

This really just looks like another affiliate ad from SD.

The Teamgroup T-Create 6000/CL30 recently posted has hynix chips/is a great deal. This is too, but personally I'd pay the extra $12.
