Hmm, been eyeing these small mini PCs as a dedicated plex server. Current plex server is my laptop which isnt ideal, it's always asleep.

Serious question: something like this or a nvidia shield pro to run plex server?

Depends if you need to transcode and how many users. Keep in mind you'll need an external drive.

What OS would you use?

Not sure about this box (seems like it'd be OK), but a Shield isn't great for running Plex server. Just a few days ago someone asked this question on Reddit and all the answers were don't do it. I turned it off on mine and it runs better.

It .dropped another buck to $128.99 after $10 off coupon. Not sure why this isn't FP at only $3.04 more than the prior on again off again FP deal, and with shipping in a matter of days rather than weeks.

Received mine on Saturday, put the NVMe drive in an external enclosure, burned Home Assistant OS to it, reinstalled the NVMe drive, booted up HA, restored a backup from my other machine, and it's running like a champ.

Seems like this box comes with Win11 so I'd probably stick with that. As far as number of users, it'd be just 1...me Smilie. I don't share my plex server outside my network and I have an external ssd (Samsung T7) with all of my files so I'm good there. I wouldn't expect any of my clients (Rokus + Sony/Android TV) to transcode anything. They should all be direct streams. FWIW, it's mostly light streaming...nothing over 1080P video and all in standard formats: avi, mpg, a few mkv (maybe, can't recall).
