1. 450-500F temperature rating uses all metal construction for durability and ease of cleaning.
2. Mechanical settings to facilitate setup. Electronics are cheaper to fabricate but are more sensitive to high heat.
3. Smaller cooking volume promotes even temperature throughout the cooking cycle. Avoid placing items on multiple trays.
4. Large circulation fan can reduce cooking time. Downside is more clean up effort. A unit with heating elements at the top and bottom doesn't need a powerful fan.
