The side quests are decently flushed out but they are not locked in order if you progress the main story.
The DLC is not locked so don't hop into a boat and go to the DLC island (even though it has the best armor in the game I got tested and you don't get off the island without finishing the main DLC quest).
You can pet deer, cats, and monkeys along with writing Hiku and picking flowers.
The dialogue/actions can come back to haunt you but it's not save reverting worthy(except one of the last ones to grab the other ending)
I don't think I'll play it a second time. That being said I don't know how crazy the modding community has went which may add a ton of extra fun/content on PC
GoT is a great game, in my opinion.
