The Specialty Coffee Association publishes a list of approved brewers that meet their strict criteria for water temperature. None of these machines is on that list. The Breville machines are probably best if you want the maximum level of configurability, because they allow you to set your desired temperature. Personally, I use an SCA approved Zwilling machine because I found it on sale. It gets plenty hot.

Yes, certainly scalding. My home hot water heater maxes out at 160, IIRC.


To avoid having the temperature of the cup make a difference (because that can vary), I put a small double-walled espresso cup inside of a larger cup, and let it overflow while I measured the temperature. I'm sure it would be somewhat cooler if it was taken from an initially cold cup. It was a reliable thermometer that I use a lot and have checked against calibrated thermocouples, though.
