Which would be good for an 8 year old who loves Star wars?
Probably Racer because the other games can be quite difficult and challenging for an 8 year old.
But the other choice would be Jedi Power Battles, a beat-'em-up where you play as Jedi, slashing through enemies. It's arcade-style and cooperative, which could be fun.
Tbh everything on this list under 8 bucks were amazing when they originally came out and the switch ports are still fun to play now. I've got kotor, pod racer, Jedi knight 2, and republic commando for the switch and they are all solid ports.

The Switch version of KOTOR is arguably the best version of this game. It is an upgrade over the original XBOX version. Both visually and from a QoL perspective.

It is very playable. The graphics are improved, there are various quality of life improvements and a set of things you could normally only do through the console are available.
However, the restored content is not available. The originally intended to include it but ultimately were not able to because of their agreements with Disney/LucasArts. It was quite controversial because they promised it when they initially sold the game.
EDIT: I should note that unlike KOTOR, the PC would be my first choice for KOTOR II. There is an incredible ecosystem of mods available and the 2nd game does support controller input on PC.
