This is partially true. The M1, M2, M3 chips will have a limitation of 1 external display and the internal at the same time. The M3 Macbook Pro and Air were updated to 2 externals if the computer is in Clamshell Mode. The M1/2/3pro chips are able to do multiple externals in addition to the built-in screen though.
I looked at the reviews and there's a few calling out using Displaylink to achieve multiple displays. The product page doesn't specifically call out that it's needed, which is odd since that's usually a selling point.

Right, the M1/2/3 can only do 1 display out since they have that limitation on the chip but Pro/Max/Ultra variants should be able to push more displays. I'll report back when I get it in.

Hmm. The M1 and M2 Minis can do 1 4K display on HDMI and 1 4K display on thunderbolt/displayport simultaneously. The macbooks can't do that?

Correct. The built-in display of the Macbook counts as a display, so 2 total output displays unless you are using third party workarounds like DisplayLink

It's possible that I missed something, but from what I gathered, the 1 display limit you are talking about is specific to early apple silicons. Do you know if the 2 external clamshell mode is using one thunderbolt port? The one output problem I was talking about existed before m processors. It is caused by Apple's refusal to include MST in their thunderbolt implementation. Most docks wouldn't be able to output two extended displays from one thunderbolt connection from the MacBook unless MST was added. I am only talking about thunderbolt docks. I don't want to get into the can of worms that is displaylink.
