Depends on the macbook. Macs limit the number of TB --> DP signals they output, and that number increases with the spec/generation, as well as if your lid is open or closed (example: https://www.youtube.com/watch?v=c..._U&t=1136s).

You can think of these hubs / docks as basically passing through the monitor signal from thunderbolt to displayport (the outputs are HDMI, but it's just doing a DP to HDMI conversion).

If you dont have enough monitor outputs for your needs, what you need is a DisplayLink hub. These take the signal using USB (not TB), use extra CPU processing on the device itself, and output a completely separate video output in addition to the native thunderbolt display-outs.
I haven't seen a thunderbolt + displaylink dock/hub at a reasonable price, so your best bet is probably two separate hubs at that point.
