I suggest anyone considering this look at the free options from Eskimo and Roamless instead. I think Eskimo's current offer is 500MB that expires after 2 years.
I also use keepgo it's slightly more expensive but the data never expires (new feature)

My concern is more or less with the fact that devices will push a ton of data, email, app updates, background notifications, etc., and kill that 10GB data allotment pretty quickly over our planned 3 week trip. Thank you.

Instead of hotspot, I recommend everyone your group get a cheap Ubigi eSIM. It's owned by NTT, which is the best network in Japan.
A free trial like this one is perfect for testing the setup in the US first.
If you have dual esim compatible phone (iPhone 11+) then you can force the AT&T (e)sim to use the data only esim to do wifi calling. Your battery life will be terrible, but you can use AT&T sim normally.
